Dominique Bouchet—Lovely Friday Indulgence

Dining with cheerful mood is the theme of Friday evenings.

Here comes my Friday Dinner adventure in Dominique Bouchet, with delectable food and palatable wine, plus amicable setting, amiable dinner pars. Quelle dolce vita!

Began with a plate of amusing snacks, olive pistachio cake, biscotti, the ambience was bubbling as our champagnes. Joke and humor sprinkled throughout.

During the meal, chef Dominique Bouchet came out to chat with our table. A modest man with extensive experiences in Michelin stared kitchens, including Joël Robuchon, La Tour d’Argent, and hotel de Crillon, gained a sense of oriental zen during his traveling in East Asia, particularly Japan. As the conversation continues, a mirthful air starts to spread.

Words can hardly be more convincing than Dominique’s adeptness in treating simple ingredients nimbly, nor his seamlessly integration of Asian flavors to French plates: The aerial smoothy purée de pommes de terre (paired with Le lièvre)–signature of  Joël Robuchon, Tempura style dusted langoustine with rich hollandaise and soya, illustrates his intention to strike an eclectic approach between the the oriental and the occidental.

Dominique’s immense employment of fruits is remarkable, which not only endows every dish with the vivid color but also strikes another dimension: Spikes of beets and mangos coulis enlivened the silky supple slices of St-Jacque; crispy bitter pampoulemousse emulsion structured a strip of delicate St-Pierre: both are brilliant.

After a week of deadly labor, a bright Friday dinner with my endearing friends finally brought me back to life.

The Menu Degustation:

Amuse Bouche: Mousseline de  carotte (carrot mousseline)

Capaccio St-Jacque aux betteraves, Coulis de Mangue 

Foie gras de canard poêlé au pain d’épices, pomme et figue rôties

Beignets de grosses crevettes au basilic, façon tempura, mayo


Gros macaronis de homard sur purée de champignons, coulis de carapaces

 Saint-Pierre à la vapeur, émulsion de beurre au pamplemousse, fanes de jeunes épinards

Le lièvre en civet, petits oignons glacés au sucre,champignons et lardons

Tarte au chocolat amer – sorbet fruits rouges.

Petits Fours: Truffles Chocolats, nuages, financiers
